I've seen portabella mushrooms used as kind of meat stand-ins in a lot of dishes? I have never tried this myself, but... yeah, I don't know where I was going with that, I fail at advice XD But I'm watching some Iron Chef America behind-the-scenes thing right now. That feels appropriate somehow.
